Gradually add lukewarm milk and whisk to make a smooth, medium-thick batter without lumps. Cover and rest the batter for 30 minutes. This allows the semolina to absorb the liquid and helps the honey's aroma blend beautifully into the batter. 2. Fry the Malpua on Low Heat Heat ghee or oil in a kadai and reduce the heat to medium-low. Pour one ladleful of batter into the centre of the oil. Let the Malpua cook gently until it turns light golden-brown, then carefully flip and cook the other side. Because honey contains natural sugars, it can caramelise and brown faster than regular sugar. Keep the heat low and fry carefully to prevent over-browning. 3. Drain & Serve Remove the fried Malpuas and place them on a strainer or absorbent surface to drain excess ghee/oil.
